This Turkey and Egg Plant Pasta is loaded with flavor! I actually came up with the recipe one day by simply playing around with produce and spices in my kitchen. I was on a health kick, and wanted to make something healthy, yet hearty. Italian style ground turkey smothered in rich and chunky garden style spaghetti sauce, with succulent chopped pieces of eggplant. The perfect easy and healthy recipe to impress your family and guest.

HOW TO MAKE ITALIAN GROUND TURKEY AND EGGPLANT PASTA

Ingredients
* 6 whole mushrooms, chopped
* 1/2 sweet onion, chopped
* 1/2 green pepper, chopped
* 6 Garlic Cloves, chopped finely
* 1/2 of a whole eggplant, sliced then chopped into squares
* 1 lb of Italian style ground turkey
* salt and pepper to taste
* onion powder
* garlic salt
* Italian spices
* 7 zucchini ( you can substitute the zucchini with your choice of angel hair pasta if you would like)
* 2 tbsp of olive oil
Instructions
1. Chop all veggies. (mushrooms, onions, green pepper, garlic, and eggplant)
2. In a large skillet over low heat, add the tbsp of olive oil.
3. Add all veggies to the skillet. Sprinkle with a little garlic salt and pepper. Continue to cook on low until tender.
4. In another skillet while the veggies are being sauteed, cook the turkey until brown.
5. Once the turkey is done, drain and add it to the veggie mixture.
6. Add your choice of chunky garden style spaghetti sauce
7. Garnish the sauce with all of your seasonings above to your liking. Put a lid on, and let the sauce simmer on medium low.
8.While the sauce simmers....for those using the zucchini noodles as pasta, start spiraling your zucchini in your spiral cutter now.
After spiraling, put the zucchini noodles in a large skillet, with a half cup of water to seam for about 15 minutes. Until tender.
9. Serve
