When is the last time you tried a new recipe??! What inspired you to take the Leap?






 Since the beginning of the pandemic, my daughter and I have been trying a lot of new recipes. I wanted to cook more at home and eat out less. Whenever I'm in the feeling of wanting to try something new, I immediately start searching on Pinterest. We've been finding some very delicious recipes that wont crack the bank to try.  


This past Sunday I had a few of pretty ripe Bananas that I didn't wanna just throw away. I usually make banana bread out of them, but this week I wanted to try something new. When looking for new recipes, I always look for what's rather simple and incorporates some kind of balance with my faves. I came across this very easy recipe for Cinnamon Banana Muffins to try for the family. I focused more on recipes requiring the ingredients I already had at home. I was NOT in the mood to tackle the grocery store.


The muffins came out great! They are so delicious. Very moist and packed with so much flavor. Topped in butter and a sweet cinnamon crumble which pushes the flavor over the top! The kids and my parents loved them. The muffins can be served hot or cool. Pairs well with your morning cup of coffee. One morning I even added a sausage patty and eggs to the mix. They can also be served after dinner as a light desert or snack. Definitely a must try. For those that are anything banana lovers, please give this recipe a try. It will not disappoint!



Ingredients

banana bread muffins

·      2/3 cup granulated sugar

·      1/2 cup vegetable or canola oil

·      2 large eggs

·      2/3 cup mashed banana (about 2 small bananas)

·      1 teaspoon vanilla extract

·      1 2/3 cup all-purpose flour

·      1 teaspoon baking soda

·      1/2 teaspoon salt

·      1/2 teaspoon ground cinnamon

cinnamon & sugar topping

·      3 tablespoons butter, melted

·      1/4 cup granulated sugar

·      1/2 teaspoon ground cinnamon

 

Instructions

1.                   Heat oven to 375 degrees. Spray bottoms only of 12 regular-size muffin cups with cooking spray. Or you can also use liners.


2.       In medium bowl combine the sugar, oil, eggs and stir with wire whisk. Add in bananas and vanilla, whisk until combined. 




3.       Add in flour, baking soda, salt, and cinnamon and stir together until just combined.


4.       Divide batter evenly among muffin cups. Each muffin cup will be almost to the top. About 3/4 full.


5.       Bake 17 to 21 minutes or until toothpick inserted in center comes out clean and muffins are high and rounded on top. The tops of the muffins should not look wet (that means they're not fully cooked).



6.       Remove muffins from pan to a cooling rack. 




7.       For the cinnamon & sugar topping : Combine the sugar and cinnamon in a small bowl. Put melted butter in a separate small bowl. Dip muffin tops into melted butter and then into cinnamon-sugar. Serve warm or let cool completely.

This is 44...........The Self-Love Era!

 This past July 30th, I celebrated my 44th birthday. I swear, once I turned 35, these birthdays started coming around fast as hell. But I thank the most high for allowing me to see them all. Giving me the opportunity to be here for my beautiful children, as well as my family and close friends.  A part of my brand is encouraging self-love and improvement. Daily I strive to evaluate myself inside and out, as well as where I am in life. After much reflecting, there is a lot that I'm truly proud and grateful for. But there's also things that I must continue to work on daily to enhance my inner being. While there's room for improvement, I also thank my current self for becoming the woman I currently am. I will continue to celebrate all wins in life no matter how big or small. This past year was filled with so many small wins that I've prayed for a long time. We owe it to ourselves to acknowledge and celebrate those wins too. 44 is my era of self-love, my healing of progress
