Sunday recipe



Hi guys!!!

So today I decided to make one of my favorite recipes.....Chicken breast stuff with spinach and mozzarella cheese. I actually haven't made it in a while. Every now and then, I like to switch it up . Things can get rather boring by preparing it the same each time.





INGREDIENTS
Whole Chicken Breast
Spinach
Mozzarella Cheese
2 cups Progresso Italian Bread Crumbs
3 Eggs
Oil
your favorite seasonings that you usually season your chicken with. I used Lawry's Adobo , garlic powder, black pepper, and a little of Italian seasoning.


PREPARATION 
1. In a large skillet, pour in 2 cups of vegetable oil. heat on medium
2. Wash your chicken with warm water. Make sure to pull all fatty parts off as well.
3. Cut each breast in half. After cutting in half, split each breast half way down in the middle. This will make it easy to stuff each breast.
4.  Season each piece with your favorite spices.


5. Beat eggs in a medium bowl.
6. Pour the Italian Bread Crumbs into a zip lock bag
7. Take 4-5 pieces of the season chicken. Dip them individually into the egg mixture until coated.
8. Now drop each piece individually into the Italian Bread Crumbs bag. Seal and shake the bag until each piece is coated. Then place each piece on a plate.


9. Place the Italian Bread Crumb covered chicken into the hot skillet. Cook about 5-7 minutes per side until each side is golden brown.
10. Repeat steps 7-9 with remaining chicken.


11. After all pieces are brown, line a baking pan with foil. spray the foil with oil
12. Line all pieces of slightly fried chicken into the lined baking dish
13. Open the center of each chicken breast.  Stuff with spinach first
14. Stuff the mozzarella cheese in next





15. Cover the dish with aluminum foil
16. Bake for about 30-35 minutes (until fully cooked)

THEN YOUR DONE!!!

Serve with your favorite starch and another veggie. I always cook a pot of wild rice, and maybe broccoli as another side

This is sooooo delicious. It's definitely a must try! So many people ask me for this recipe.

 This past July 30th, I celebrated my 44th birthday. I swear, once I turned 35, these birthdays started coming around fast as hell. But I thank the most high for allowing me to see them all. Giving me the opportunity to be here for my beautiful children, as well as my family and close friends.  A part of my brand is encouraging self-love and improvement. Daily I strive to evaluate myself inside and out, as well as where I am in life. After much reflecting, there is a lot that I'm truly proud and grateful for. But there's also things that I must continue to work on daily to enhance my inner being. While there's room for improvement, I also thank my current self for becoming the woman I currently am. I will continue to celebrate all wins in life no matter how big or small. This past year was filled with so many small wins that I've prayed for a long time. We owe it to ourselves to acknowledge and celebrate those wins too. 44 is my era of self-love, my healing of progress
